Green Sisters Tomato’Licious Chutney
A Simple Sharing Recipe
200g Tomato (tinned or fresh and roughly chopped)
2 cloves of garlic
A generous bunch of coriander leaves, chopped (80g)
1 green finger chilli (optional)
Black pepper to taste (We use 1/2 tsp)
Salt, to taste (We use 1/4 tsp)
1 red onion
Squeeze of lemon juice (1-2 tbsp)
Firstly, peel a red onion and quarter.
Next, add the red onion, 2 cloves of garlic (peeled), finger chilli, chopped tomato and coriander to a blender.
Blitz for 30 seconds until forms a thick liquid consistency. Add water or a small amount of virgin olive oil here to form a texture you like. Add black pepper & salt to taste.
Finally squeeze some lemon juice and mix well, garnish in a serving dish with a sprig of either mint or coriander, before serving with a tasty samosa.
Great on a sandwich, flatbread
or even in a wonderful wrap!!
