A great way to keep a healthy after dinner plate (dessert!) is by combining ingredients which are nutrient rich, to overcome the carbohydrate dense and refined sugar rich diets, which can be a real concern for vegetarians.
It’s not a problem having a three course meal when the third course is light, sweet and better still, totally naturally sweet. There is no need to embellish with refined sugars, with this treat. Simply wonderfully tasty fruits of summer, mixed and then topped with a part oats and part gluten-free plain flour base combined with coconut butter and almonds to soften. For some extra sweetness, you can go that extra mile with maple syrup or honey drizzled over the summer fruits, but I’m happy with mine as is, with some wonderful vanilla flavoured light cream.
